Why kitchen exhaust cleaning is a fire-safety requirement
A grease fire in a kitchen duct does not stay in the kitchen. Once grease inside the duct ignites, the duct acts as a chimney: heat and flame travel with the airflow towards the fan and roof, often through ceiling voids and floors above. Clean ducts remove that fuel.
That is why UAE Civil Defence fire-safety requirements, building insurers and landlords all expect commercial kitchen exhausts to be cleaned on a documented schedule. How often should a commercial kitchen exhaust be cleaned?
NFPA 96, the international standard for commercial kitchen ventilation, sets the interval by how hard the kitchen works:
- Monthly — solid-fuel cooking such as charcoal grills, tandoors and wood-fired ovens
- Every three months — high-volume kitchens: 24-hour operations, hotel main kitchens, fried and wok cooking
- Every six months — moderate-volume restaurants and cafés
- Yearly — low-volume kitchens such as seasonal outlets, churches or small staff pantries
Most UAE restaurants fall into the quarterly or six-monthly bands. At the survey we measure the grease build-up and recommend an interval for your kitchen, then book the next visit so you are not left to remember.
